Minestrone
Minestrone is an impressive dinner. Made with 1/4 c. olive/cooking oil, 1 medium/large onion, sliced, 2 or 3 garlic cloves, minced, 2 medium/large carrots, sliced and 2 or 3 celery stalks, sliced, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Heat oil in large pot.
Add onion, garlic, carrots, celery and leek.
Saute until onion is tender.
Add tomatoes with liquid, breaking up tomatoes; stir in broth, parsley, basil, oregano, salt and pepper.
Bring mixture to a boil; reduce heat, cover and simmer 20 minutes.
Stir in beans and cabbage.
Simmer 10 minutes longer.
Stir in zucchini and macaroni.
Simmer for 30 minutes and serve with Parmesan cheese.
