Microwave Peanut Brittle
Microwave Peanut Brittle is an moderately easy dinner. Made with 1 c. raw peanuts, 1/2 c. white corn syrup, 1 tsp. butter or oleo, 1 tsp. baking soda and 1 c. granulated sugar, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Use a microwavable glass bowl.
Stir together peanuts, sugar, syrup and salt. Cook in microwave on High 7 to 8 minutes, stirring well after 4 minutes.
Add butter and vanilla to syrup, blending well.
Return to microwave and cook 1 minute more. The peanuts will be lightly brown and the syrup very hot.
Add baking soda and stir gently until light and foamy. Pour and spread mixture quickly onto a lightly greased flexible cooking sheet. Let cool for 1/2 hour. When cool, break into small pieces and store in an airtight container. You can use 1 cup pecans or 1 cup sesame seeds instead of the peanuts.
