Made with 1 large tomato, chopped, 1/4 c. chives, chopped, 1/2 c. onion, chopped, 1 large clove garlic, pressed and 1 3/4 c. chicken broth, this recipe delivers authentic, satisfying flavors. Bring chicken broth to boil.
Saute onion and garlic in olive oil for 2 minutes.
Add rice; saute for 2 minutes.
Add boiling chicken broth, cumin and pepper.
Cover and simmer for 10 minutes. Add tomato and chives; simmer for 5 minutes.
Remove from heat; stir and set aside (covered) for 10 minutes before serving.
