Mexican Rice and Bean Pie
Mexican Rice And Bean Pie is an moderately easy dinner. Made with 2 c. pinto beans, 1 to 2 tsp. cumin, 1 c. cottage cheese, 1 1/2 c. cooked brown rice and 1/2 c. finely chopped onion, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Warm pinto beans slowly with cumin, stirring occasionally. Mix rice with onion, jalapeño peppers and beaten egg.
Use back of a spoon to spread rice mixture into a 9-inch pan to make a "crust".
Spread cottage cheese over bottom of crust.
Drain pinto beans and add this as next layer.
Bake 20 minutes at 325°. Remove from oven and sprinkle cheese on top.
Return to oven for another 20 minutes.
Let stand 10 minutes.
Serves 4 to 6.
