Mexican Rice

Mexican Rice is an easy dinner. Made with 1 clove garlic, cut in half, 2 tbsp. vegetable oil, 1 c. uncooked long grain rice, 2 c. chicken broth and 1/4 c. casera sauce, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook and stir garlic in oil in 2-quart saucepan over medium heat until brown.

Remove garlic.

Cook and stir rice in oil until golden, about 5 minutes.

Stir in chicken broth and Casera sauce. Heat to boiling, stirring occasionally.

Reduce heat.

Cover and simmer 20 minutes.

(Do not lift cover or stir.)

I use more than 1/4 cup sauce.

Makes 8 servings.
