Mexican Potatoes
Mexican Potatoes is an moderately easy dinner. Made with 6 to 8 medium potatoes, 1 onion, 1 green pepper, chopped, 1 lb. pasteurized process cheese spread, cubed and 1 can diced tomatoes with green chilies, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Boil potatoes whole until done.
Cool and slice.
Layer in a 13 x 9 x 2-inch casserole dish.
Saute onion and green pepper in margarine.
Add cheese and tomatoes.
Stir together until melted. Pour over potatoes and bake at 350Β° for 20 minutes or until bubbly.
