Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 1 tbsp. oil, 1/2 c. onion, chopped, 1 lb. lean ground beef, 1 (2 1/2 oz.) can black olives, chopped (optional) and 2 (8 oz.) pkg. mozzarella cheese, shredded, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Preheat oven to 350Β°.
Heat oil in large pan over medium heat. Add onion and garlic and saute until translucent.
Add meat and cook until browned, stirring frequently.
Blend in tomato sauce, taco seasoning, chilies and olives.
Simmer about 10 minutes. Grease a 9 x 13-inch baking dish.
Layer tortilla chips over the bottom.
Add all the meat mixture, then the Mozzarella cheese and the sour cream.
Top with another layer of chips. Bake until heated through, about 30 minutes.
Sprinkle with Cheddar cheese and bake until it melts.
Let stand 5 minutes before serving with more tortilla chips.
Makes 2 (8-inch) square pans.
