Mexican Casserole
Mexican Casserole is an moderately easy dinner. Made with 3/4 c. onion, finely chopped, 2 tbsp. butter, 1 (15 oz.) can tomato sauce, 1 (4 oz.) can green chilies, diced and 2 tsp. cumin, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Saute onion in butter until transparent.
Add sauce, chilies, cumin, salt and red pepper.
Simmer, uncovered, for 10 minutes. Layer in buttered 9-inch square baking dish half of the following: tortilla chips, Monterey Jack cheese, beef and sauce.
Repeat once.
Bake in preheated 350Β° oven for 20 minutes.
Remove from oven and spread sour cream on top.
Sprinkle with Cheddar.
Bake an additional 5 to 10 minutes.
