Mexicali Casserole
Mexicali Casserole is an moderately easy dinner. Made with 1 lb. ground beef, 2 stalks celery, 1 medium onion, 1 green pepper and salt, pepper and cumin to taste, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Brown beef; drain off fat.
Add celery, onion, pepper and seasonings; cook until almost tender.
Add beans, tomato sauce and hominy.
Simmer until thick.
Put in casserole dish; bake 15 to 20 minutes.
Top with grated sharp Cheddar cheese and crushed tortilla chips.
Bake until cheese bubbles.
Bake at 350° to 375°. Freezes well.
