Mediterranean Chicken and Mushrooms
Mediterranean Chicken And Mushrooms is an impressive dinner. Made with 1/2 lb. mushrooms, 1/4 c. flour, 3 lb. chicken, 4 tbsp. oil and 1 c. chopped onion, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Slice mushrooms. Dredge chicken with flour; shake off excess. Heat oil in large saucepan. Add chicken and brown well. Remove chicken.
To oil remaining, add onion, green pepper and garlic. Saute 3 minutes. Add mushrooms and saute 4 minutes. Stir in tomatoes, water, salt, Italian dressing and red pepper.
Bring to a boil.
Stir in rice.
Return chicken to saucepan.
Cover, reduce heat and simmer for 45 minutes or until chicken is tender.
Serves 4.
