Meatless Meatballs is an moderately easy dinner. Made with 1 loaf whole wheat bread, cut into 1/2-inch cubes, 3 eggs, 1/4 to 1/2 c. milk, 1/3 c. freshly grated cheese (parmesan or romano) and 2 cloves garlic, cut small, this recipe delivers authentic, satisfying flavors. Beat eggs.
Add milk and remaining ingredients except bread. Mix well and add bread cubes. Mix with wet hands to form balls, pressing a little so that bread is no longer in cubes.
If too dry, add more milk.
Brown lightly in oil (Mazola or olive). Drain on paper towels.
