Meat Gravy
Meat Gravy is an moderately easy dinner. Made with 2 tbsp. meat drippings, 1 to 2 tbsp. flour, 1 to 2 tbsp. fat, degreased pan juices and milk, water, stock, cream, wine or flat beer to make 1 c. and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Remove meat from pan.
Strain drippings and remove fat except for 1 to 2 tablespoons.
Pour off all but 2 tablespoons drippings. Blend into them flour with wire whisk until flour has thickened and until mixture is well combined and smooth.
Continue to cook slowly and stir constantly while adding degreased pan juices and whatever liquid you choose to make 1 cup.
Add salt, pepper and minced herbs.
Add a few drops of coloring.
Cook until thickened. Makes 1 cup.
(Can be doubled.)
