Mary Glynn's Soda Bread
Mary Glynn'S Soda Bread is an moderately easy dinner. Made with 4 c. whole wheat flour, 1 heaping tbsp. baking powder, 2 tsp. salt, 1 3/4 c. buttermilk (at room temperature) and 2 eggs, well beaten, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Sift flour, baking powder and salt.
Mix in sugar.
Cut in butter with pastry blender; work well.
Mix eggs well with buttermilk; add soda dissolved in small amount of buttermilk.
Add to the dry ingredients.
Turn out on lightly floured board.
Knead only until smooth.
Shape into loaf.
Bake in 9-inch greased cake pan at 350Β°.
Cool covered lightly for 30 minutes with cloth. Slice when completely cool.
