Marmalade - with Pectin
Marmalade - With Pectin is an easy dinner. Made with 6 mandarins, 1 1/2 c. water, 1/2 bottle liquid pectin, 2 lemons and 5 c. sugar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Remove mandarin and lemon peels, lay peel flat, cut off as much of the white part of the peel as possible, discard white.
Slice the peel into very thin slices.
Cover with 1 1/2 cups water, bring to a boil and simmer for 20 minutes.
Chop the fruit pulp and discard any seeds and membrane.
Add pulp to undrained peel and simmer for 10 minutes.
Measure 3 cups of the fruit into a kettle and mix in sugar.
Follow procedure on pectin container for the rest of the processing.
Skim foam off top and ladle into hot, sterilized glasses, seal.
Makes seven 8 ounce glasses.
