Marinated Tomatoes
Marinated Tomatoes is an moderately easy dinner. Made with 4 to 5 c. coarsely cut tomatoes, 1/4 c. vinegar, 1/3 c. olive oil, 2 cloves minced garlic and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Toss tomatoes with all other ingredients and marinate in refrigerator.
Serve over lettuce, over pork or veal cutlets, linguini with olives or garlic toast with Mozzarella cheese. Brush on fish fillets as a marinade, then serve tomatoes on the side.
Or, add onions and chili peppers and use as salsa.
