Marinated Carrots
Sliced carrots, onion, and green pepper steeped in a tomato-soup vinaigrette tangy with mustard and vinegar. Better the next day, and a colorful change from the usual cold side.

Bring carrots with water to cover to a boil and boil 5 minutes.
Drain and cool.
Mix all other ingredients, then add carrots.
Cover tightly and chill overnight.
(Any marinade leftover may be refrigerated and used as a dressing for salad.)
