Magic Lemon Meringue Pie
Magic Lemon Meringue Pie is an moderately easy dinner. Made with 1 (8-inch) baked pastry pie shell, cooled, or crumb crust, 1 (14 oz.) can eagle brand sweetened condensed milk, 1/2 c. lemon juice, 1 tsp. lemon rind, grated and 2 eggs, separated, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In medium size bowl, combine sweetened condensed milk, lemon juice and rind.
Blend in egg yolks.
Turn into cooled crust.
In a small size bowl, beat egg whites with cream of tartar until soft peaks form.
Gradually beat in sugar until stiff peaks form when beater is raised.
Spread over filling.
Seal to edge of crust. Bake in slow oven (275° to 325°) for 12 to 15 minutes or until meringue is golden brown.
