Maggie'S Beet Top Soup is an moderately easy dinner. Made with 1 qt. beet tops, young and washed, 2 bunches onion tops, cut into 1-inch pieces, 3 carrots, chopped small, 2 medium potatoes, diced small and 1 c. uncooked rice, this recipe delivers authentic, satisfying flavors. Combine everything except milk in large kettle.
Simmer slowly for 1 to 1 1/2 hours until vegetables are tender.
When done, add 1 can evaporated milk.
Add extra water if needed.
