Louisiana Rice Griddle Cakes
Louisiana Rice Griddle Cakes is an moderately easy dinner. Made with 2 c. cooked rice, 2 c. flour, 1 tbsp. baking powder, 2 eggs and 2 tbsp. cooking oil, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Use leftover or freshly cooked rice.
Place in saucepan with about a half cup of water and overcook (very soft).
Beat egg yolks; add milk, oil, salt, sugar, flour and soft rice, stirring after each addition.
Fold in stiffly beaten egg whites.
Bake on hot griddle until bubbles burst in center.
Turn only once.
Note: Batter may be made the previous day, but omit baking powder and egg whites.
Add these at the last minute.
