Lobster in Chafing Dish
Lobster In Chafing Dish is an moderately easy dinner. Made with 2 to 3 small lobster tails, boiled and cut in small pieces, 3 tbsp. butter, 1 can sliced mushroom caps, 1 tbsp. flour and 1/2 pt. heavy cream, this recipe delivers authentic, satisfying flavors. Melt 3 tablespoons butter in pan; saute lobster and mushrooms for 5 minutes.
Sprinkle in flour and stir.
Add cream and shrimp. Season with salt, pepper, nutmeg, sherry and cheese.
Add egg yolks slowly.
Place in chafing dish and allow to thicken.
If necessary, can be thinned with cream.
Serve on Melba toast rounds.
