Lo-Fat Banana Bread
Lo-Fat Banana Bread is an moderately easy dinner. Made with 1/3 c. oil, 2/3 c. sugar, 1 c. mashed ripe banana (2 to 3 medium bananas), 1 3/4 c. sifted all-purpose flour and 2 tsp. baking powder, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Beat oil and 1/3 cup sugar together.
Add banana and mix well. Sift flour and baking powder together, add to batter and beat. In separate bowl, beat egg whites until foamy.
Gradually add 1/3 cup sugar and beat until egg whites form soft peaks.
Fold egg whites into the batter. Pour into lightly oiled 5 x 9-inch loaf pan and bake in preheated 350Β° oven for 45 to 50 minutes.
Remove from oven, allow to stand 10 minutes.
Invert bread on wire rack to cool.
