Lo-Cal Chicken Primavera
Lo-Cal Chicken Primavera is an impressive dinner. Made with 1 tbsp. olive oil, 1 lb. boneless chicken breasts, cut in chunks, 2 c. sliced fresh mushrooms, 1 medium onion, cut into chunks and 1/2 c. green and red pepper, diced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Heat oil in a large skillet.
Add chicken, mushrooms, onion, green pepper and garlic.
Cook, stirring occasionally, until chicken is cooked through and vegetables become soft.
Add olives and tomatoes that have been broken into chunks.
Add seasonings. Simmer mixture gently to partially reduce liquid.
Serve over a bed of Italian Risotto or pasta of your choice.
