Lisa's Red Beans and Rice
Lisa'S Red Beans And Rice is an impressive dinner. Made with 1 to 2 lb. eckrich or hillshire farms polish sausage (winn-dixie brand about as good and cheaper), 2 (1 lb.) cans kidney beans, 1 medium bell pepper (hand size), 2 medium onions (hand size) and 6 to 8 stalks celery, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Cut your sausage up thin.
Saute in skillet and set aside. Cut up your onions, pepper and celery (coarsely) and saute in olive oil.
Add tomatoes, seasonings, tomato paste and sausage. Add mushrooms and beans last.
Cook long and slow on medium to low heat, not high heat.
Serve over rice with garlic bread.
