Lima Bean Soup
Lima Bean Soup is an moderately easy dinner. Made with 1 lb. dried lima beans, 1/4 c. vegetable oil, 1 medium onion, chopped, lots of celery and celery leaves and 1 c. stewed tomatoes or tomato sauce or juice, this recipe delivers authentic, satisfying flavors. Rinse lima beans.
Cover with water and soak overnight.
Drain beans and add 3 1/2 quarts boiling water.
Add remaining ingredients.
Simmer slowly until beans are tender and soup has thickened.
