Lily Coates' Lemon Cheese
Lily Coates' Lemon Cheese is an easy dinner. Made with 8 lemons (rind and juice), 1 lb. butter or oleo, 4 c. sugar and 16 eggs, well beaten, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Grate finely only the yellow rind on all 8 lemons.
Ream juice from all 8 lemons.
Put rind, juice, sugar and butter/oleo into top of double boiler and stir until all sugar is dissolved.
Bring to a boil and slowly add the beaten eggs, whisking constantly so eggs do not congeal.
Stir until thick like pudding.
Remove from heat.
Makes 5 pints.
