Lila's Bran Muffins
Lila'S Bran Muffins is an moderately easy dinner. Made with 2 c. 100% bran cereal (nabisco), 2 c. boiling water, 2 c. sugar, 1 c. oil and 4 eggs, beaten, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Mix cereal and boiling water and set aside to cool.
Mix sugar, oil, eggs, buttermilk, soda, flour and salt together with cooled cereal mixture.
Add all-bran cereal and raisins.
Pour into muffin cups and bake at 375Β° for 15 to 20 minutes.
Snipped dried apricots, chopped fresh apple or chopped cranberries may be added for half the raisins.
Chopped nuts are a good addition. This keeps in the refrigerator for 4 weeks, or bake all at once and freeze.
