Lida Crawford's Chicken Pie
Lida Crawford'S Chicken Pie is an moderately easy dinner. Made with 1 fryer, boiled, skinned, deboned and cut in bite size pieces (save broth), 5 boiled eggs, 1 large pet milk, 1 stick oleo and 1 tsp. baking powder, this recipe delivers authentic, satisfying flavors. For pastry, break 1 egg in cup; finish filling with milk.
Add baking powder, shortening and flour.
I sift flour in medium sized bowl; make hole and work up with hands.
Knead until stiff enough to roll for dumplings.
Roll thin and divide in 3 pieces.
Cut in strips, put layer of chicken first, then layer of dumplings, another of chicken, then dumplings and more chicken.
Cut eggs in rounds and place on top, then top crust.
Pour enough boiling broth over pie to keep moist.
Place stick of butter on top.
Bake until begins to brown.
Add Pet milk; put back in oven to finish.
Makes a huge pie.
