Lemonade Cookies
Lemonade Cookies is an moderately easy dinner. Made with 1 c. butter, 1 c. granulated sugar, 2 eggs, 3 c. all purpose flour, sift before measuring and 1 tsp. baking soda, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cream butter and sugar, add eggs and beat until light and fluffy.
Sift together flour and soda; add to creamed mixture, alternating with 1/2 cup lemonade concentrate.
Stir in lemon peel.
Drop by teaspoonfuls.
Bake at 400 degrees for 8 minutes or until lightly browned around the edges.
Brush hot cookies with remaining lemonade concentrate the sprinkle with a little granulated sugar. Or, chill the dough, make balls and roll in coarse sugar, bake and glaze with concentrate.
Makes 3 to 4 dozen cookies.
