Lemon Walnut Muffins
Lemon Walnut Muffins is an moderately easy dinner. Made with 1 c. sugar, 1/2 c. softened butter or margarine, 2 eggs, 1 c. plain yogurt or 7/8 c. buttermilk and 2 tbsp. grated lemon peel, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Cream the sugar and softened butter or margarine until pale and fluffy. Beat in the eggs, one at a time, then the yogurt or buttermilk, lemon peel, salt, soda and walnuts.
Gradually add the flour, mixing until well blended.
Spoon into greased or paper lined 2 3/4-inch muffin cups. Bake at 375Β° for 18 to 20 minutes until springy to the touch.
Makes 18 muffins.
