Lemon Wafers
Lemon Wafers is an moderately easy dinner. Made with 1/2 c. margarine, 3/4 c. firmly packed light brown sugar, 1 egg, 2 tsp. grated lemon rind and 1 1/2 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cream margarine; gradually add sugar, beating until light and fluffy.
Add egg, lemon rind and lemon juice, beating well. Combine flour, soda and salt; add to creamed mixture, mixing just until blended.
Drop dough by rounded teaspoonful, about 2 inches apart, on cookie sheets coated with cooking spray.
Bake at 400Β° for 8 to 10 minutes.
Remove from cookie sheet immediately and cool on wire rack.
Yields 3 1/2 dozen (about 49 calories each).
