Lemon Rice(Serves 4) is an moderately easy dinner. Made with 2 1/2 c. canned chicken broth, 1 garlic clove, slightly crushed, 1 c. long grain rice, 1 tbsp. finely grated lemon zest (peel) and 2 tbsp. chopped fresh dill, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Heat the broth and garlic in heavy saucepan to boiling.
Stir in the rice; cover and simmer until liquid is absorbed (about 20 minutes).
Remove from heat.
Stir in lemon zest and let stand covered for five minutes.
Remove garlic clove.
Gently stir in dill and butter.
Season to taste with pepper.
Serve.
