Lemon Meringue Pie
Lemon Meringue Pie is an moderately easy dinner. Made with 1 1/2 c. sugar, 1/4 tsp. salt, 1 1/2 c. boiling water, 2 tbsp. butter and 6 tbsp. cornstarch, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In a 4-cup glass measure, combine 1 1/2 cups sugar, water and butter.
Cook 2 to 4 minutes, stirring halfway through.
Blend cornstarch with 3 tablespoons water and stir into hot sugar mixture.
Cook 2 to 3 minutes, stirring after each minute.
Stir in 1/3 cup lemon juice and lemon peel.
Gradually add egg yolks, taking care to avoid overcooking.
Cook mixture 3 to 4 minutes, stirring after each minute.
Cool and pour into pie shell.
