Lemon Meringue Pie
Lemon Meringue Pie is an moderately easy dinner. Made with 1 tbsp. cornstarch, 2 tbsp. cold water, 1/2 c. boiling water, 1 tsp. vanilla flavoring and 3 egg whites, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Mix sugar and cornstarch in 1 1/2-quart saucepan.
Stir in water gradually.
Cook over medium heat, stirring constantly, until mixture thickens and boils.
Boil and stir 1 minute.
Stir at least half of the hot mixture gradually into egg yolks.
Blend into hot mixture in saucepan.
Boil and stir 1 minute.
Remove from heat; stir in butter, lemon peel and lemon juice.
Pour into pie shell. Preheat oven to 350Β°.
