Lemon Meringue Pie
Lemon Meringue Pie is an moderately easy dinner. Made with 1/2 c. plus 1 tbsp. cornstarch, 1 1/2 c. sugar, pinch of salt, 1 3/4 c. hot water and 4 eggs, separated, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Combine cornstarch, 1 1/2 cups sugar and pinch of salt in pan; stir to blend well.
Gradually stir in hot water until well mixed. Cook over medium heat, stirring constantly, until mixture thickens and bubbles.
Lower heat and cook 1 minute longer.
Beat egg yolks slightly in small bowl.
Stir in about 1/2 cup of the hot mixture. Stir into cornstarch mixture in pan.
Cook, stirring constantly, 2 minutes.
Remove from heat.
Stir in butter and lemon rind until butter is melted.
Gradually stir in lemon juice.
Cool 5 minutes. Pour into pie shell.
