Lemon Jello Cake
Lemon Jello Cake is an moderately easy dinner. Made with 1/2 c. fresh lemon juice (about 3 lemons), 2 tsp. grated lemon rind, 1 1/2 c. pineapple juice, 1/4 c. applesauce and 1 1/2 c. powdered sugar, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Preheat oven to 350Β°.
Coat an 8 1/2 x 11-inch pan with vegetable oil spray.
Simmer pineapple juice until it's reduced to 3/4 cup.
Mix applesauce and egg whites in a large bowl.
Stir in lemon rind, Jell-O and cake mix.
Slowly add pineapple juice; beat for 5 minutes.
Pour into greased pan and bake for 30 to 40 minutes.
Mix lemon juice and powdered sugar and pour over hot cake.
