Laura's Summer Squash
Laura'S Summer Squash is an moderately easy dinner. Made with fresh yellow squash (small tender squash work better), sugar, salt, pepper and butter, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
If using crookneck squash, cut off most of the narrow crookneck.
Slice squash in half lengthwise.
Boil until tender but still firm.
Drain water and place on towel to further drain. Grease baking dish large enough to accommodate the amount of squash you are cooking.
Place cooked squash in dish seed side up, one layer.
Score through seed several times with knife.
Drizzle melted butter on each squash.
Sprinkle salt, pepper, and sugar on each piece and top with Cheddar cheese.
Run in oven at 350Β°F and heat until cheese melts.
