Kim'S Mexican Rice is an moderately easy dinner. Made with 2 c. whole grain rice (uncooked), 1 can cream of chicken soup, 2 small cans green chiles, diced, 1 (16 oz.) carton sour cream and 1 chopped onion (medium size), this recipe delivers authentic, satisfying flavors. Simmer rice in 4 cups of water for 20 minutes in covered saucepan; do not stir or remove lid or rice will get sticky.

In a large pan, saute the onion in oil until tender.

Turn heat off and add soup, sour cream, green chiles and 2 cups of the cheese.

When rice is done, stir it into this mixture.

Pour mixture into 9 x 13-inch pan and top with remaining cheese.

(You can top with black olives, if desired, or add some chopped chicken breast.)

Bake at 350Β° for approximately 30 to 40 minutes.
