Jelly Roll Cake
Jelly Roll Cake is an moderately easy dinner. Made with 3 large eggs, 1 c. sugar, 5 tbsp. water, 1 tsp. vanilla and 1 c. flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Grease and flour a 15 1/2 x 10 1/2 inch jelly roll pan, or line pan with waxed paper.
Beat eggs until thick. Gradually beat in sugar.
Then beat in at once water and vanilla. Sift together and beat in all at once the flour, baking powder and salt.
Beat just until smooth.
Pour in prepared pan and bake at 375Β° for 12 to 15 minutes or just until the cake tests done.
Turn immediately upside-down on towel that is sprinkled with confectioners sugar. Spread cake at once with jelly or jam, and roll up.
Keep it wrapped until cool.
