Jamaican Junk Casserole
Jamaican Junk Casserole is an moderately easy dinner. Made with 1 lb. pork sausage, 1 large onion, chopped, 1/2 green pepper, chopped, 1 1/2 c. chopped celery and 1/2 c. uncooked rice (not minute rice), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Brown the sausage; drain, saving 3 tablespoons of fat.
Saute the onion, green pepper and celery in reserved drippings.
Pour water over soup mix.
Combine all ingredients except the almonds. Place in a large baking dish.
Bake for 1 hour at 350Β°.
Remove from oven and sprinkle buttered almonds over the top.
Return to oven and bake, uncovered, for another 10 to 15 minutes.
Serves 6 to 8.
