Jalapeño Potatoes
Jalapeño Potatoes is an moderately easy dinner. Made with 8 medium red potatoes, 1 stick oleo, 2 small bell peppers, chopped, 2 tbsp. flour and 2 small jars pimento, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Peel and slice potatoes; boil slowly for 3 to 5 minutes. Drain.
Melt oleo; saute bell pepper and onion until tender.
Add flour, salt, pepper and pimento; blend.
Add milk and cook until sauce begins to thicken.
Add cheeses and cook on low heat until cheeses are melted and blended.
Place potatoes in a casserole dish; pour sauce over them.
Bake at 350° for 40 minutes.
Serves 8 to 12.
