Italian Pot Roast
Italian Pot Roast is an moderately easy dinner. Made with 4 1/2 lb. boneless chuck roast, 1 c. chopped mushrooms, raw or canned, 1 crushed garlic clove, 1 tbsp. olive oil and 1 c. chopped green olives, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Place meat in a hot skillet and sear for 1 minute on each side.
Then place meat in a crock-pot.
Put all other ingredients on top of meat.
Cover and cook on high setting for 2 hours, then on low for 6 hours.
If you are in a hurry, cook on high for 4 1/2 hours.
The longer it cooks in the crock-pot the better it is. Serve with mashed potatoes, rice, spaghetti or noodles.
