Italian Eggplant
Italian Eggplant is an moderately easy dinner. Made with 1 medium eggplant, 1/2 c. butter, 1/4 c. dry bread crumbs, 1 (8 to 10 3/4 oz.) can tomato sauce with mushrooms and 1 tbsp. crushed oregano, this recipe delivers authentic, satisfying flavors. Pare eggplant and cut into 1/2-inch slices.
Melt butter.
Dip eggplant in mixture of crumbs and salt.
Place on greased cookie sheet.
Spoon sauce on each slice and sprinkle with oregano and cheese.
Bake in 450Β° oven for 10 to 12 minutes. Makes 4 to 5 servings.
