Indian Pudding
Indian Pudding is an moderately easy dinner. Made with 4 c. milk, 1/4 c. cornmeal, 1/2 tsp. salt, 1/4 tsp. ground ginger and 3/4 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Heat 3 cups of milk in saucepan.
In a double boiler, combine cornmeal, salt, ginger, cinnamon and remaining milk.
Pour in heated milk, stirring to combine.
Cook, stirring constantly, until smooth.
Reduce heat to simmer water.
Cook 25 minutes, stirring frequently. Grease a deep 1-quart dish.
Remove bowl from heat; stir in butter and molasses until mixture is smooth.
Stir in eggs.
Pour batter into baking dish.
Bake at 350Β° for 1 hour. Serve warm.
