Indian Cornbread
Indian Cornbread is an moderately easy dinner. Made with 2 c cheddar cheese, 1 med onion, chopped, 1 med bell pepper, chopped, 1 lb ground meat and 1 c cornmeal, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Shred 1 pound (2 cups) Cheddar cheese.
Set aside.
Chop 1 medium onion and bell pepper.
Set aside.
Brown 1 pound ground meat in an iron skillet; empty all meat and grease out of skillet. Mix in a mixing bowl:
1 c cornmeal, 1 (16 oz) can creamed corn, 1 c milk, 1 egg, 1 tsp baking powder, and 1/4 tsp soda.
Pour 1/3 meal mixture into skillet.
Put meat, onions, pepper, then cheese, being careful not to let cheese touch sides.
Bake in preheated 425Β° oven for 55 minutes or until golden brown.
Let cool in pan 10 - 15 minutes for cheese to set before cutting.
Then cut in pan, or turn out on plate.
