Iguana Tom's Ultimate Oven Omelette
Iguana Tom'S Ultimate Oven Omelette is an moderately easy dinner. Made with 4 eggs, 1/2 c. egg substitute (e.g. egg beaters), 1/2 c. low-fat or nonfat plain yogurt, 1/2 c. finely chopped spanish or other sweet onion and 1/4 c. finely chopped red bell pepper, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Preheat oven to 375Β°.
Spray a 2-quart casserole with Pam or other cooking oil spray.
Gently saute onion and red pepper in 1 tablespoon olive oil until soft, about 5 minutes.
Stir in corn and remove from heat.
Combine eggs, egg substitute, yogurt and seasonings.
Beat with a wire whisk or hand mixer about 1 minute. Stir in vegetables and pour into casserole.
Bake in upper 1/3 of oven for about 40 minutes or until knife inserted in center comes out clean.
