Hush Puppies
Hush Puppies is an moderately easy dinner. Made with 6 slices bacon, 1 1/2 c. corn meal mix, 1/2 c. self-rising flour, 1/2 c. chopped onions and 1 egg, beaten, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook bacon until crisp.
Drain and crumble.
Set aside. Combine cornmeal mix, flour, onion and bacon.
Make a well in center of mixture.
Add egg, buttermilk and 2 tablespoons bacon drippings.
Stir just until moistened.
Pour oil into Dutch oven. Heat to 375Β°.
Drop batter by tablespoon into oil.
Fry a few at a time, turning once, to golden brown.
Drain on paper towels. Serve immediately.
Yield: 20 hush puppies.
