Hot German Potato Salad
Hot German Potato Salad is an moderately easy dinner. Made with 3 medium onions, chopped coarsely, 4 lb. potatoes, 3/4 c. sugar, salt and pepper to taste and 1/2 lb. bacon, diced, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Boil potatoes until tender, peeling the skins off and slice while still warm.
Heap chopped onions in center of potatoes.
Top with sugar, salt and pepper.
Fry cut up bacon, stirring, until crisp.
Skim bacon from frying pan; set aside.
Add water and vinegar to bacon grease and bring to a boil.
Pour over potatoes and onions and toss this mixture lightly to mix well.
Add bacon, crumbled, last.
Slice boiled eggs to garnish top.
Serves 8 to 10.
