Hot German Potato Salad
Hot German Potato Salad is an moderately easy dinner. Made with 6 medium potatoes, boiled in skins until tender, 6 slices bacon, fried crisp, 3/4 c. chopped or thinly sliced onion, 2 tbsp. flour and 1 to 2 tbsp. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Peel potatoes and slice thinly into bowl.
Fry the onion in the leftover bacon grease until the onion becomes yellow.
Then, mix in the flour, sugar, salt, celery seed and pepper; blend until smooth.
Gradually stir in water and vinegar; cook, stirring constantly, until mixture boils.
Boil 1 minute; pour over potatoes.
Break the crisp bacon into pieces; add half of it and toss with other ingredients.
Cover and let stand until ready to serve.
