Holiday Cranberry Conserve
Holiday Cranberry Conserve is an moderately easy dinner. Made with 2 oranges, unpeeled, 2 c. water, 4 c. fresh cranberries, 2 c. sugar and 1 c. golden raisins, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Grate orange peel; cut oranges in half.
Remove seeds and chop coarsely.
Place grated peel and chopped pulp in blender with the water.
Blend about 1 minute, until finely ground.
Pour mixture into a saucepan and cook covered over medium flame for 20 minutes. Add cranberries, sugar, raisins and salt; boil rapidly uncovered over medium-high flame until mixture drops from spoon in a sheet, leaving the spoon clean.
Stir in nuts and cook 5 minutes longer, stirring gently to avoid scorching.
Chill.
Serve in a pretty crystal bowl.
Yield
3 to 4 cups.
