High Fiber Apple Muffins is an impressive dinner. Made with 1 1/2 c. buttermilk, 3 oz. high fiber bran cereal, 1 egg, lightly beaten, 2 tbsp. melted butter and 2 tbsp. honey, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine buttermilk, cereal, egg, butter and honey; mix.
Let stand until cereal softens, 3 or 4 minutes. Preheat oven to 375Β°. Combine remaining ingredients.
Mix just until blended.
Pour into greased muffin tins.
Bake 30 minutes, until browned.
Test with a toothpick.
Let cool on racks for 5 minutes.
